Apricot Lemon Pudding

INGREDIENTS

1,82kg Sponge cakes
• 1 kg Nestlé Condensed Milk
• 2 Fresh lemons (Squeeze out the juice)
• 1,8kg Whipped cream
• 2 Tbsp. Lemon zest (Finely grated from the lemons)
• 0,56kg Ladyfinger biscuit
• 0,9kg Apricot slices

METHOD

1. In a heavy-duty electric mixer, whip cream to a stiff peak (hard), transfer into a mixing bowl, refrigerate till needed.
2. Safely open the Nestle condensed milk, add lemon zest and lemon juice, and gently mix to infuse the flavours
3. Add the whipped cream, using a rubber spatula, continue mixing till the pudding mix is creamy and smooth
4. Slice the sponge cakes into thin slices, set aside on a baking tray
5. Decant Apricot slices into a colander or strainer, to get rid of access liquid, place in a bowl
6. In a baking tray, align the sliced sponge cake, lady finger Biscuits and apricot slices
7. Pour the pudding mix on top of the layered ingredients, using a spatula to smoothen the top
8. Repeat the step twice to make a delicate, delicious Apricot Pudding
9. Garnish with fresh berries and apricot slices
