Peppermint Chocolate Fudge

INGREDIENTS

• 2 Cups NESTLÉ Peppermint Crisp Crumbles
• 2 Kgs White Baking Chocolate (Cut into blocks)
• 2 Tblsp Olive Oil
• 1 Kg NESTLÉ Condensed Milks

METHOD

1. Line a dish with parchment paper or aluminium foil. Lightly spray it with non-stick spray and set aside.
2. In the top section of a double boiler, or a large glass bowl set over a pan of simmering water, add white chocolate and two tablespoons of olive oil on high heat. Gently mix until completely melted.
3. Reduce the heat and fold in pieces of NESTLÉ Peppermint Crisp Crumbles. TIP: If you prefer a chunky texture then rather remove the mixture from the heat and let it cool before folding in the Peppermint Crisp Crumbles so that it doesn’t melt completely.
4. Add NESTLÉ Condensed Milk and continue to gently mix until the mixture resembles a light, creamy and thick texture.
5. Pour the chocolate mixture into the lined baking tray, cover and refrigerate for an hour or until it sets fully. (The more the mixture sets, the easier it will be to cut into solid pieces.)
6. Using a sharp knife, cut into generous blocks. Sprinkle sea salt and serve with whipped or fresh berries for flavour contrast. For a truly indulgent experience, pair with a dark roast coffee such as NESCAFÉ Gold Alta Rica – the bold taste will offset the sweetness of the treat. TIP: Store this delicious delight in an airtight container or wrapped tightly in plastic wrap and stored in a Ziplock bag. Too much air in the container can dry out the fudge and make it crumbly.
