Giant Cookie Pudding
A lovely "pick-me-up" dessert for cold and rainy days.
INGREDIENTS
160g Butter, at room temperature
150g Demerara sugar
1 Egg
150ml NESTLÉ Ideal Evaporated Milk
15ml Vanilla essence
250g Cake flour, sifted
5ml Bicarbonate of soda
Large pinch of salt
NESTLÉ Smarties and Easter eggs
Vanilla ice cream
METHOD
Preheat your oven to 180 Degrees Celsius. Grease a 25cm round baking dish or pan with some extra butter.
Place the room-temperature butter and Demerara sugar in a large bowl. Beat the two ingredients until light and fluffy. Then add the egg, NESTLÉ Ideal Evaporated Milk and vanilla essence. Continue to beat until all the ingredients are thoroughly combined.
As soon as the wet ingredients are properly mixed, add the sifted cake flour, bicarbonate of soda and a pinch of salt to the mixture. Using a spatula, mix all the ingredients together until smooth.
Pour the mixture into the prepared baking dish and smooth it out with a spatula or the back of a spoon. Decorate the top using your creative flair with the NESTLÉ Smarties and Easter eggs.
Place the baking dish into the preheated oven. Bake for approximately 20 minutes, allowing the pudding to become golden on the outside.
Serve it warm and top it off with vanilla ice cream (or whatever flavour you like best) for an almost unbelievably perfect balance of flavour and texture.
