Granadilla & Lime Fridge Tart
A refreshing summer treat for the whole family, in easy portions.
INGREDIENTS
¾ Cup coconut or ginger biscuits, roughly crushed
2 Tbsp (30ml) butter, melted
1 packet granadilla jelly
250ml boiling water
½ Can NESTLÉ Full Cream Sweetened Condensed Milk
1 Can (380g) NESTLÉ Ideal Evaporated Milk, Chilled
250g cream cheese
80ml granadilla pulp, strained
2 Limes, juice and finely grated zest
Granadilla juice and lime juice.

METHOD
Cut the granadilla fruits in half and scoop the flesh into a bowl. Blitz with a hand blender and sieve the pulp. Set aside.
TIP: An easy alternative to buying granadilla fruit, is frozen granadilla fruit puree. It’s affordable and can be found in most grocery stores.
Crush the coconut or ginger biscuits with a blender. Place in a bowl, add the melted butter and mix until fully combined. Arrange the biscuit base into individual serving pots or dishes.
Mix the granadilla jelly granules and boiling water together until dissolved and set aside.
Using an electric mixer, whisk NESTLÉ full cream sweetened condensed milk, cold NESTLÉ Ideal Evaporated Milk and cream cheese together until smooth. Add the jelly mixture, granadilla juice and lime juice. Grate the lime zest into the mixture as well. Mix until thoroughly combined.
Spoon the mixture into the individual pots or dishes and chill in the fridge for at least 1 hour.
Before serving, whip the cream and spoon it over each tart. Top off with granadilla pulp, lime zest and granadilla wedges.
Sit back and enjoy every refreshing mouthful on a hot summers day.
