                Mushroom and Spinach Pasta
Here is a great option for meat-free Mondays!

                    1 Tbsp (15ml) Oil

                    2 Garlic cloves
                    
                
            
                    
                
                    
                
                
                    250g Mushrooms
                    
                
            
                    
                
                    
                
                
                    2 Cups Baby Spinach Leaves
                    
                
            
                    
                
                    
                
                
                    1 Can (290g) NESTLÉ Dessert & Cooking Cream
                    
                
            
                    
                
                    
                
                
                    ½ Cup (125ml) Chicken Stock
                    
                
            
                    
                
                    
                
                
                    2 Tbsp (30ml) Pesto

                    300g Pasta shapes
                    
                
            
                    
                
                    
                
                
                    ¼ Cup (24g) Cheddar cheese
                    
                
            
                    
                
                    
                
                
                    ¼ Cup (24g) Parmesan cheese
                    
                
            
            METHOD
            
                Heat the oil in a pan and fry the onion and garlic for 5 minutes. Add the mushrooms and fry for 3 minutes. Stir in the spinach and cook for 2 minutes.
            
        
                
            
                Add the cream, chicken stock, pesto and season with salt and pepper.
            
        
                
            
                Stir in the pasta and cheese and heat through.
