Phirni Recipe
This classic dessert, is a favourite during Ramadaan. A sweet and creamy semolina dessert, perfect those days you don’t want to spend too much time in the kitchen.
INGREDIENTS
660ml of full cream Milk
½ cup of NESTLÉ full cream sweetened condensed milk
½ tin of NESTLÉ Dessert and Cooking Cream
½ tsp of aromatic ground cardamom
3 Tblsps of finely textured semolina
¾ tsp of tantalizing agar-agar
1 Tblsp of fragrant rose water
1 Tblsp of rose syrup
¼ cup of finely chopped pistachios
¾ cup of NESTLÉ Whipping Cream
2 tsps of NESTLÉ full cream sweetened condensed milk
Edible dried rose buds for a beautiful finish
METHOD
In a small pot, add the milk, dessert cream, ground cardamom, agar-agar, and semolina, blend using a stick blender for 30 seconds.
Place the pot on a medium heat, bring to a simmer, simmer for 5 minutes while stirring lovingly.
Then add the smooth NESTLÉ full cream sweetened condensed milk and simmer for a further 3 minutes.
TIP: Slow cooking is key to a flavourful, rich Phirni as you let all the flavours fuse together.
Stir in the rose water, rose syrup and lastly the finely chopped pistachio for hints of nutty flavour.
Pour into 6 bowls, refrigerate for 4 hours before serving.
In a small bowl, pour the whipping cream, condensed milk and rose syrup. Using a hand beater fitted with a whisk attachment, whisk the cream to stiff peaks.
Fill a piping bag fitted with a star nozzle with the whipped cream.
TIP: If you don’t have a piping bag, you could use a spoon OR if you really want to get crafty, you can use a sandwich or Ziplock bag, just snip off a bottom corner of the bag with scissors and voila - a piping bag!
Lastly pipe the tops of each phirni bowl with whipped rose cream. Top with a rosebud and a sprinkle of pistachios. Sit back to savour every bite.
